Okra Stir Fry
Ingredients:
- 2 cups fresh okra, washed, trimmed, and sliced into bite-sized pieces
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
Instructions:
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the sliced onions and cook until they start to turn translucent, about 2-3 minutes.
- Add the minced garlic and ginger, and sauté for an additional 1-2 minutes until fragrant.
- Toss in the sliced okra and red bell pepper. Stir-fry for about 5-6 minutes until the okra becomes tender and slightly browned.
- In a small bowl, mix together the soy sauce and sesame oil. Pour this mixture over the cooked vegetables in the pan.
- Sprinkle in the red pepper flakes for a touch of heat. Season with salt and pepper to taste.
- Continue to stir-fry for another 2-3 minutes, allowing the flavors to meld together.
- Once the vegetables are cooked to your desired level of crispiness, remove the pan from heat.
- Transfer the stir-fry to a serving dish. You can top it with toasted sesame seeds and sliced green onions for an extra pop of flavor and color.
